#Nobake chocolate – fresh strawberry cheesecake in a glass



Serves: 8 Preparation time: 15′ Cooks in: 15′ Ready in: 30′

Ingredients
For the crust:
1 pack of digestive biscuits, crumbled
100g butter (82%), melted
50g granulated sugar
½ lemon, zested


For the cream:
500g mascarpone cheese, at room temperature
300ml whole-fat milk
150g dark chocolate, finely chopped

For topping:
200g strawberries, washed, hulled, quartered or diced
chocolate syrup, optional

Method

Step 1
For the crust: In a bowl mix all ingredients until well combined. Set aside.

Step 2
For the cream: Put dark chocolate in a bowl. Heat milk and when very hot (do not let it boil) pour over the chocolate. Whisk until melted. Gently fold in the cheese.

Step 3
To assemble the desserts: Place about 1/4 cup of digestive crumbs in the bottom of glasses (a tumbler or wine glass is perfect). Gently press the crumbs into a crust on the bottom using the back of a spoon. Add a layer of cream, then strawberries, again biscuit crumbs, cream and strawberries, topping with lemon zest. Refrigerate until served.
